Low-Fat Frosted Chocolate Buttermilk Cake
Only 144 calories and 1.1 grams of fat per serving. This is a spiffed-up cake mix recipe with a delicious frosting. Try substituting Betty Crocker Super Moist chocoate cake mix if the Gluten-Free variety is hard to find.

Ingredients:

  • 1 box Betty Crocker Gluten Free Chocolate Cake Mix
  • 1/4 cup Fiber One Vanilla Yogurt (or regular vanilla yogurt)
  • 1/4 cup cocoa powder
  • 1/4 cup granulated Splenda
  • 1/2 teaspoon vanilla extract
  • 1/2 cup egg substitute or egg whites
  • 1 cup low-fat buttermilk

For the frosting:

  • 1 8-oz box fat-free cream cheese
  • 1/2 tub fat-free Cool Whip
  • 1/4 cup granulated Splenda
  • 1 teaspoon butter granules
  • 1 teaspoon vanilla extract
  • pinch of salt
  • Hershey's Lite chocolate syrup, optional
Directions:
1. Preheat oven as directed on cake mix box. Line a cake pan with parchment paper and non-stick cooking spray.
2. Make cake mix according to directions, using the yogurt, cocoa powder, Splenda, vanilla, egg whites, and buttermilk.
3. Bake according to package directions and let cool.
4. Beat the cream cheese, Cool Whip, Splenda, butter granules, vanilla, and salt together until smooth to make the frosting.
5. Remove the cake from the pan and frost. If desired, cut cake horizontally to make layers, frosting between each layer.
6. Refrigerate until serving. Cut into 16 slices and drizzle with chocolate syrup.
