Low-Fat Recipe: Southwestern Cream Cheese Dip

Whip up a bowl of low-fat Southwestern Cheese Dip, a Wellspring Academies favorite, and serve it up with fat free tortilla chips and fresh veggies.  Simple and delicious!

SOUTHWESTERN CREAM CHEESE DIP

Ingredients

1 medium red pepper, cut in half

1 medium yellow pepper, cut in half

1-2 jalapeño peppers, cut in half with seeds removed (leave seeds if you want dip to be spicy)

1 8 oz package fat-free cream cheese (room temperature)

½ tsp chili powder

½ tsp garlic salt

2 tbsp cumin

 

Method

1.  Preheat broiler.  Place all peppers on broiler-safe baking dish and char until skin is blackened.  Remove from oven, place in bowl and cover. Let steam for at least 10 minutes.

2. Remove charred skin by rubbing it off the peppers. Remove seeds from inside of peppers. Dice all peppers into small dice. Set aside.

3. Place softened cream cheese in medium bowl.  Add peppers, chili powder, garlic salt and cumin and mix thoroughly.

5. Chill for at last 1 hour in refrigerator.

Serve with fat free tortilla chips and vegetables. This dip is also excellent as a spread on sandwiches.

Yield: 8 ounces (4 servings – ¼ cup per person)

I am having trouble finding fat free tortillas and fat free parmesan cheese in Texas, we live in the DFW area.
